Easy Eggless Spanish Tortilla

My husband is vegan and Spanish so I’m always looking for ways to adapt traditional Spanish dishes to impress him. This eggless tortilla is super easy to make and tastes the same as the original.

First peel and slice 4-5 potatoes and fill a nonstick pan. Cook with a hefty amount of sunflower oil and cover till mushy.

In a bowl blend 4 tablespoons of garbanzo bean flour with 200 ml water, a teaspoon of baking powder, salt and turmeric for making it more yellow. Add the mix and blend into the mashed potatoes and continue to cook covered for about 10-15 minutes till the sides start to hold upright when pushed from the edge.

Place a plate over the top of the pan and flip the tortilla onto the plate. Slide back into the pan and cook the other side for about 10 minutes and flip back out onto a plate to cool. Serve with toasted bread or enjoy by itself!
