Easy “cheesy” spelt pizza dough

My quick and cheesy veggie pizza is so tasty. I especially like using spelt flour for this dough because it feels more hearty.

🍕

Dough:

1.5-2 cups spelt flour or mix of wheat and white flour🌾

2 1/4 tsp yeast

3/4 tsp salt 🧂

1 tsp sugar

1/2 tsp oregano 🌿

1/4 tsp garlic powder 🧄

2/3 cup warm water

2 Tbsp olive oil 🫒

Steps:

Mix 1 c flour with warm water, yeast, salt, sugar, oregano & garlic powder. Slowly add the rest of the flour till dough is not too sticky. Let rest for an hour or till doubled in size.

Roll out dough on a floured surface and stretch to thinness you prefer. Spread tomato sauce 🥫 more seasonings 🌿 and veggies. I used a handful of 3 different vegan cheeses we love to pick up at primaprix.

🍕

For me this crust was so good but my husband didn’t like the spelt taste. Do I told him to make his own pizza crust for us to try next time! How do you like your pizza crust?

I’ve found that spelt dough has a nutty, slightly sweet flavor that pairs perfectly with fresh tomato sauce and a variety of toppings. When preparing the dough, it’s important to slowly add the flour while mixing to ensure the right consistency—too sticky and it’s hard to roll out, too dry and it becomes tough. Allowing the dough to rest for about an hour until it doubles in size helps develop that airy texture with slight crispiness on the edges once baked. Using warm water activates the yeast better, speeding up the rising time. Adding oregano and garlic powder directly into the dough infuses subtle herby flavor, enhancing the cheesy and veggie toppings. For the cheese component, I recommend trying different vegan cheeses, such as shredded vegan mozzarella, cheddar-style, and smoked varieties, which can be sourced from specialty grocery stores like Primaprix. These melt beautifully and give a rich, creamy feel without overwhelming the crust’s spelt taste. If you or your guests find spelt flavor a bit strong, a good tip is to blend spelt flour with white or whole wheat flour for a milder taste and softer texture. Letting family members customize their own crust can also be fun—some may want a thicker crust while others prefer thin and crispy. This recipe offers the flexibility to stretch or roll the dough to your liking. Lastly, baking your pizza at a high temperature and for about 10 minutes helps achieve a bubbly, golden crust with crunchy edges. Keep an eye on it to prevent overcooking. Adding fresh basil or arugula after baking adds a refreshing contrast to the cheesy richness. Enjoy experimenting with this easy spelt pizza dough recipe and make your pizza nights nutritious and flavorful!
