Ingredients:

• 2 pounds pork shoulder, thinly sliced

• slices of fresh pineapple ( for layering with meat)

•1 cup of fresh pineapple

• 3 teaspoons achiote paste (find it in Mexican markets)

• 3 garlic cloves

• 3 chipotle peppers in adobo sauce

• 2 teaspoons ground cumin

• 1 Tablespoon dried oregano

• 1 teaspoon sea salt

• 1⁄2 teaspoon black pepper

• Juice of 1 orange

• juice of 1 lemon

• 2 tablespoons white vinegar

Blend all ingredients except the meat and the slices of pineapple. Add the adobo sauce to the meat and mix well, cover and refrigerate at least 4 hours but preferably over night for the best flavor.

Take a baking sheet and place a cookie rack or cooling rack in the baking sheet, place a thick pineapple slice on the cooling rack and prick with 3 bamboo skewers, layer the meat through skewers making sure to add slices of pineapple between the layers of meat. Top with a thick slice of pineapple. Bake at 300F for about 2 hours. Baste every half hour to make sure it stays moist and it doesn’t burn. Take out of the oven and let rest about 10 minutes before slicing. Make some delicious tacos or top some nachos with this delicious meat.
