「コーヒーに使う水、結局どれが正解?」と迷って、私は一度“水だけ”を変えて飲み比べました。結論から言うと、豆の個性(酸味や香り)を素直に出したいなら、まずは軟水寄りの水が失敗しにくいです。硬水は一見コクが出る反面、豆によっては渋みや苦みが目立って「重い味」になりやすい印象でした。 そもそも軟水・硬水の違いは、主にカルシウム(Ca)やマグネシウム(Mg)などミネラル量=硬度。ミネラルは抽出を助ける一方で、味にも介入します。体感としては、Mgが多いと苦味・渋味が前に出やすく、Caが多いと酸味が丸くなってマイルドに感じることがありました。同じ豆・同じレシピでも、水を変えるだけで「酸味が消えた」「後味が濁った」みたいな差が出ます。 家で試すなら、まずは次の順で簡単です。 1) いつもの水(普段飲む水)で淹れる 2) 国産の軟水のミネラルウォーターで淹れる 3) 浄水器を通した水で淹れる この3つだけでも、香りの立ち方や後味の“クリーンさ”が比較できます。特に浅煎りやスペシャルティは、軟水のほうがフレーバーがストレートに出て、クリーンな抽出になりやすいと感じました。 「純水が理想的抽出」という話もありますが、家庭では“いきなり純水”より、軟水寄りで安定させるのが現実的。純水(ミネラルがほぼない水)は豆の個性を邪魔しにくい反面、抽出が進みにくく感じることもあり、レシピ(挽き目・湯温・注ぎ方)の微調整が必要でした。 最後に、味がブレる人は水だけでなく、ケトルの湯垢(ミネラル由来)もチェック。硬水を使うほど湯垢が付きやすく、香りの抜けや雑味につながることがあります。豆にこだわるなら、水も“軟水寄り+清潔な器具”から整えると、おうちでもお店の方向に近づきました。
