• 3–5 slices galangal (optional) I didn’t use it this time
• 1–2 Thai chilies (smashed; adjust to taste)
• 200 g straw mushrooms or sliced button mushrooms
• 3 tbsp Tom Yum chili paste
• 2–3 tbsp fish sauce (to taste)
• 1–2 tsp sugar
• Juice of 1 lime (adjust to taste)
• Fresh cilantro (for garnish)
• Optional: 3–4 tbsp evaporated milk or Thai-style condensed milk (for creamy version)
