• Chicken thigh or pork shoulder (cut into bite-sized pieces) – 1 kg

• Bamboo skewers – 15–20 sticks (soak in water 30 mins to prevent burning)

Marinade:

• Oyster sauce – 3 tbsp

• Soy sauce – 2 tbsp

• Fish sauce – 1 tbsp

• Sugar (palm or white) – 2 tbsp

• Honey or sweet condensed milk – 1 tbsp (optional for extra gloss)

• Garlic (minced) – 1 tbsp

• White pepper – 1 tsp

• Red food coloring – ½ tsp (or paprika 1 tbsp for natural color)

• Cooking oil – 2 tbsp

🥣 Optional Additions:

• Five-spice powder – ½ tsp (adds warmth and depth)

• Lemongrass (finely chopped) – 1 tsp

🔥 Instructions

1. Prepare meat: Cut chicken or pork into uniform cubes or strips for even cooking.

2. Make the marinade: In a bowl, mix all the marinade ingredients until the sugar dissolves.

3. Marinate: Add meat to the marinade. Mix well and refrigerate for at least 4 hours or overnight for best flavor.

4. Skewer: Thread the marinated meat onto soaked bamboo skewers.

5. Grill:

• Charcoal grill: Grill over medium heat, turning every few minutes until the meat is cooked through and slightly charred.

• Oven grill: Preheat to 200°C (400°F), place skewers on a rack over a baking sheet, and roast 20–25 minutes, turning halfway and basting with leftover marinade if desired.

6. Serve: With sticky rice, sweet chili sauce, or tamarind dipping sauce.
