It's a fantastic way to enjoy the health benefits of plant-based eating while still getting those essential omega-3s and lean protein from seafood. For me, it's about making healthy choices without feeling restricted, and it opens up a world of delicious meal possibilities! Curious about what you can eat? Here's a quick rundown of my go-to pescatarian food list: Seafood: Salmon, tuna, cod, shrimp, scallops, mussels, oysters, tilapia, mackerel – basically any fish or shellfish! I try to choose sustainably sourced options when possible. Plant-based proteins: Lentils, beans (like black beans!), chickpeas, tofu, tempeh, edamame. Grains: Quinoa, brown rice, whole-wheat pasta (like penne!), oats, bread (hello, avocado toast or baguette!). Vegetables: All the veggies you can imagine! I love roasted sweet potatoes, sautéed greens, mixed greens, cucumbers, shredded carrots, red onions, and fresh herbs. Fruits: Any and all! Healthy Fats: Avocado, olive oil, nuts, seeds. Dairy/Alternatives: Milk, yogurt, cheese (mozzarella is great in sandwiches!). Sauces/Condiments: Pesto, creamy dressings, and various spices. Now for the fun part: meal ideas! I'm always looking for healthy pescatarian meals that are both easy and satisfying. Salmon & Veggie Power Bowl: This is a staple for me. I love a perfectly cooked salmon fillet paired with fluffy white rice and steamed green vegetables. Sometimes, I'll drizzle it with a creamy, reddish-orange sauce for extra flavor. It's so hearty and nutritious! Vibrant Quinoa Bowls: Inspired by some of my colorful creations, I’ll prepare a bowl with quinoa, black beans, roasted sweet potatoes, and sautéed greens. Add some pickled vegetables and avocado, then finish with a creamy green sauce. It’s a complete meal bursting with flavor and nutrients. Fresh & Zesty Salads: For a lighter option, a big salad bowl is perfect. Think mixed greens, diced cucumbers, shredded carrots, and red onions. A simple green dressing and a side of pita bread make it a refreshing lunch or dinner. Pesto Pasta with a Twist: Who doesn't love pasta? I often make penne pasta coated in a creamy white sauce, mixed with fresh red tomatoes and green herbs. Sometimes I'll even add some grilled shrimp for extra protein. Avocado Toast with Egg: For a quick breakfast or brunch, a slice of toast topped with mashed avocado and a perfectly fried egg, seasoned with pepper, is simply divine. It's simple, yet so satisfying. Gourmet Baguette Sandwiches: For a portable and delicious lunch, I adore a baguette sandwich filled with vibrant green pesto, roasted red peppers, and fresh white mozzarella cheese.
