homemade tomato soup 🍅
If you had a garden with lots of tomatoes this summer, this is the recipe you need!
I’ve wanted to make homemade from scratch tomato soup like this for a while now, this was our last batch of tomatoes from the garden this year so I decided I would go ahead and make it!
I am so glad I did because this is my new favorite thing 🥰😋
Ingredients I used
- about 2-3 tbs butter
- 2-3 tbs flour
- 1/2 quart chicken broth
- two sheet pans of halved tomatoes
- two small yellow onions
- bulb of garlic ( i didn’t have much fresh garlic so i roasted what i had, two cloves, and used refrigerated minced garlic for the rest)
- 1/2 cup heavy cream
- 1 can tomato paste
- tsp red wine vinegar ( optional )
- fresh basil from the garden ( to taste)
- salt ( a lot )
- tsp onion powder
- tsp Italian seasoning
how I made it:
- wash and 1/2 your tomatoes, quarter your onions and half the bulb of garlic. add to a baking pan and drizzle with olive oil.
- bake at 450° until roasted and soft
- add into a blender with some fresh basil
- in the pot or dutch oven, stated by making a roux with the butter and flour then added in the broth
- add in your blended tomato mixture
- add your heavy cream and some salt
- whisk in the tomato paste and add the other seasoning and vinegar
- adjust to taste
I recommend topping with shredded mozzarella and fresh basil and eating it with a grilled cheese 😊
