Ingredients:
2 1/2 cups uncooked macaroni
6 Tbsp butter
6 Tbsp flour
3 cups milk
1 1/2 tsp salt
1 1/2 tsp sugar
1 pound cubed Velveeta cheese
2/3 cup sour Greek yogurt
16 oz cottage cheese
Shredded cheese, any kind! I did about 1.5 lb block style
2 sleeves Ritz crackers, crushed
1/4 to 1/2 cup melted butter
Preheat oven to 350 degrees!
1.) Cook and drain macaroni.
2.)Melt butter over medium heat in a large pan. Stir in flour and mix well to make a roux. Add in the milk slowly and cook over medium heat,
stirring often until sauce thickens. Add salt, sugar, and cubed Velveeta cheese. Stir until it all comes together as a sauce.
3.)Remove from heat and add the sour cream and cottage cheese. Stir well! In a large bowl or pot, add the macaroni & shredded cheese. Pour in your creamy cheese sauce over it and stir it all together!
4.) grease a large baking pan and pour your Mac and cheese in. Top with the crushed Ritz crackers and drizzle melted butter.
5.) Bake at 350 degrees for 30 minutes.
