This is hands down my favorite thing to eat for dinner. Literally so simple and most of the work is just chopping veggies and throwing everything on a pan to roast in the oven for a while! Every time I eat a bowl like this I always feel so nourished afterwards without that yucky feeling that comes with eating a super rich or greasy dinner.
