Unlike stainless steel, carbon steel is prone to rust if not properly maintained. My routine for carbon steel knife care involves a thorough cleaning, as mentioned above, followed by a thin, even coat of food-grade mineral oil or camellia oil. This creates a protective barrier against moisture. Over time, carbon steel naturally develops a beautiful patina, which is a dark, protective oxidation that actually helps guard against red rust. It's a sign of a well-used and cared-for blade, and I actually love the character and history it adds! Overall knife maintenance is a holistic approach, ensuring your tools are both functional and beautiful. While sanding can make your knife look better and remove imperfections, don't forget about keeping it *sharp*. To address a common question floating around: 'can I use sandpaper to sharpen a knife?' – yes, you can in a pinch, especially if you mount it to a flat surface, but it's generally not my primary method for achieving a razor-sharp edge. Sandpaper is absolutely fantastic, however, for refining an edge after sharpening, for deburring, or for polishing. For proper sharpening, I prefer a good set of whetstones or a dedicated sharpening system. And finally, proper storage is key!
