Make my Daily Matcha W/ Me 🫶
Switching from coffee to matcha has been the best decision ever. I’m able to stay focused for longer periods of time without feeling groggy or anxious. Additionally, when you find quality matcha, it makes for a delicious drink. 🍵
I’ve been making matcha lattes at home to save money for my wedding. I used Ippodo’s Sayaka and made a Pandan brown sugar inspired by Sift and Simmer’s Pandan Syrup recipe. ✨

So many of you have asked about my famous Pandan Matcha Latte, and I'm so excited to share more tips and tricks beyond just the basic recipe! Switching from my regular coffee habit to this vibrant green drink has truly transformed my mornings, giving me that sustained focus without any jitters. And honestly, making it at home has been a huge money-saver, especially with big life events like a wedding coming up! Let's dive into the star ingredient: that gorgeous Homemade Pandan Brown Sugar Syrup. While the original article mentioned being inspired by Sift and Simmer, I've perfected my own super simple version that you can easily whip up. You'll need about 10-12 fresh pandan leaves (you can often find these at Asian grocery stores, sometimes even frozen!), 1 cup of brown sugar, and ½ cup of water. Just wash the pandan leaves, tie them into a knot (or chop them roughly), and simmer them with the brown sugar and water until the sugar dissolves and the syrup thickens slightly. The aroma is incredible – sweet, vanilla-like, and slightly grassy. Strain the leaves out, and you've got liquid gold ready for your lattes. This syrup is what gives my Pandan Matcha Latte its unique, irresistible flavor profile that's truly next level. Now, for the matcha itself. I'm a big fan of Ippodo Sayaka for its beautiful color and smooth, clean taste, perfect for lattes. But no matter which ceremonial grade matcha you choose, getting the consistency right is key. Always sift your matcha powder to avoid clumps. For a perfect creamy latte, I recommend using about 1-2 teaspoons of matcha powder with 2-3 ounces of hot (but not boiling!) water – around 175°F (80°C) is ideal. Whisk it vigorously with a bamboo whisk (chasen) until it's frothy and smooth. This step is crucial for that authentic matcha experience. Once your matcha shot is ready, spoon in about 1-2 tablespoons of your Homemade Pandan Brown Sugar Syrup into your glass. Add a generous amount of ice, and then pour in your milk of choice. I personally love oat milk for its creaminess, but almond or cow's milk works wonderfully too. Gently pour your whisked matcha over the milk, and watch the beautiful layers form. Give it a gentle swirl before enjoying. Beyond the taste, the benefits are real. I used to feel that post-coffee crash, but with matcha, my energy is steady, and my focus is sharper. It's packed with antioxidants, and the L-theanine gives you that calm alertness. It’s perfect for kicking off your day after a lazy morning, or even as a refreshing pick-me-up. Trust me, once you try this Pandan Matcha Latte at home, you'll wonder how you ever lived without it!
