1 lb ground beef (80/20)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 tosp chopped fresh cilantro (plus more for garnish)

2 tbsp vegetable oil (for frying)

Sour cream, salsa, and guacamole for serving> Cook the Filling: In a large skillet over medium-high heat, cook ground beef, onion, and garlic until beef is browned and onion is softened (about 5-7 minutes). Drain any excess fat.
