Soft, buttery banana bread with a sweet cinnamon swirl — cozy, warm, and impossible to resist!
Ingredients
Banana Bread:
• 1 ½ cups (395g) mashed ripe bananas (about 3 large)
• 2 cups (264g) all-purpose flour
• 1 ½ tsp baking powder
• ½ tsp baking soda
• 1 tsp ground cinnamon
• ½ tsp salt
• ½ cup (100g) granulated sugar
• ¼ cup (55g) light brown sugar, packed
• ½ cup (115g) unsalted butter, melted
• 2 large eggs
• 1 tsp vanilla extract
Cinnamon Sugar:
• ½ cup (100g) light brown sugar
• 1 tbsp ground cinnamon
Instructions:
1️⃣ Preheat oven to 350°F (175°C). Grease and line a 9×5” loaf pan with parchment paper for easy removal.
2️⃣ In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
3️⃣ In a large bowl, whisk together mashed bananas, sugars, and melted butter until smooth.
4️⃣ Whisk in eggs and vanilla.
5️⃣ Fold in the dry ingredients with a rubber spatula until just combined — don’t overmix!
6️⃣ In a separate small dish, mix the brown sugar and cinnamon for the topping.
7️⃣ Pour half the batter into the pan and spread evenly. Sprinkle half the cinnamon sugar on top. Add the remaining batter and top with the rest of the cinnamon sugar. I like to add extra because some will caramelize.
8️⃣ Bake 40–45 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
9️⃣ Cool in the pan for 20–30 minutes, then lift out and slice. Best served warm — but delicious anytime! 💛
