Recipe:

Creamy Smoked Gouda Chicken & Broccoli Alfredo

(Serves 4–6)

Ingredients:

• 1 lb penne pasta

• 2 large chicken breasts, seared in olive oil & cubed

• 3–4 cups broccoli florets, steamed then roasted at 425°F for 15–20 min until tips are golden

• 2 cups heavy cream

• 1 cup freshly grated Parmesan

• ½ cup grated Asiago

• ½ cup grated smoked Gouda (trust me on this)

• 3–4 tbsp butter

• 4 cloves garlic, minced (or 1 tsp garlic powder)

• ½ tsp onion powder

• ½–1 tsp liquid smoke (start small, adjust to taste)

• Salt & fresh cracked black pepper to taste

• Optional: red pepper flakes or fresh parsley to finish

Instructions:

1 Cook penne in salted water until al dente, reserve 1 cup pasta water, drain.

2 While pasta cooks, sear seasoned chicken breasts in a hot skillet with olive oil until golden, then cube.

3 In the same pan, melt butter, sauté garlic for 30 seconds, then pour in heavy cream. Bring to a gentle simmer.

4 Gradually whisk in Parmesan, Asiago, and smoked Gouda until melted and velvety. Add onion powder, liquid smoke, salt, and plenty of black pepper. If too thick, loosen with a splash of pasta water.

5 Toss in cubed chicken, roasted broccoli, and drained penne. Stir until everything is gloriously coated.

6 Serve immediately with extra Parm and parsley on top.

Tastes like a fancy restaurant but made in your own kitchen in under 45 minutes 🤤 Enjoy!!

... Read moreMaking a creamy Chicken & Broccoli Alfredo pasta at home is easier and more satisfying than you might think. The key to bringing out the rich flavors lies in the combination of cheeses and the touch of liquid smoke, which adds depth and a subtle smoky aroma that elevates the dish beyond a traditional Alfredo. When cooking the penne pasta, it’s important to reserve some pasta water; the starchy water helps to loosen and bind your Alfredo sauce perfectly, ensuring the sauce clings to every piece of pasta beautifully. Roasting the broccoli after steaming creates caramelized edges that offer a delightful texture contrast and a hint of sweetness, balancing the richness of the cream and cheese. Searing the chicken breasts in olive oil to a golden brown not only seals in the juices but also adds a savory crust that enhances the overall mouthfeel. For those looking to tailor the heat level, adding red pepper flakes during the final toss or as a garnish offers a nice spicy kick without overpowering the smoky, creamy base. Fresh parsley on top adds a burst of color and freshness that brightens each bite. This recipe is an excellent option for meal prepping too. You can make a bigger batch, portion it, and freeze for quick, hassle-free meals throughout the week. Just reheat gently on the stove or microwave with a splash of milk or broth to loosen the sauce. More tips: Using good-quality freshly grated cheeses rather than pre-grated can make a huge difference in meltability and flavor. If smoked Gouda is hard to find, a mild smoked cheddar can work as an alternative but try to keep the liquid smoke for that distinctive smokiness. Lastly, always taste and adjust seasoning as you go—salt, pepper, and liquid smoke are unique to each palate. This recipe balances elegance with comfort, making it perfect for family dinners or impressing guests with your culinary skills from your own kitchen.
