Sourdough Discard Pizza Pockets 🥟🍕

Crispy golden pockets stuffed with gooey cheese and all your favorite fillings — the perfect way to use up that sourdough discard! This quick dough comes together fast with a tangy boost from the discard.

Ingredients (makes about 4–6 pockets):

• 2–2¼ cups bread flour (plus extra for dusting)

• 1 Tbsp granulated sugar

• 1 tsp salt

• 1 packet Fleischmann’s RapidRise Yeast

• 1 cup warm water

• ½–¾ cup sourdough discard (unfed is fine!)

Instructions:

1 In a large bowl, mix the dry ingredients (flour, sugar, salt, yeast). Add the warm water and sourdough discard. Mix with your hands until a sticky dough forms.

2 Turn onto a floured surface and knead 5 minutes until smoother (add a little extra flour if needed). Form into a ball, cover, and let rise in a warm spot for 10–15 minutes.

3 Divide the dough into portions. On parchment paper, stretch or roll each piece into a small oval. Fill one half with cheese and your favorite toppings, fold over, and crimp the edges to seal well.

4 Place on a pizza stone or baking sheet. Brush tops with olive oil (I brushed mine with Parmesan garlic butter for extra flavor!). Bake at 450°F for around 25 minutes until deeply golden and crisp.

You can stuff them with whatever you’d like — onions, bell peppers, mushrooms, pesto sauce, pepperoni, sausage, spinach, extra cheese… go wild with whatever you’re into!
