Mini Strawberry Cheesecakes

Makes 12 mini cheesecakes

Ingredients

Filling:

• 16 oz (2 packages) cream cheese, softened

• ½ cup sugar

• 1 tsp vanilla extract

• 2 large eggs

Crusts:

• 12 mini graham cracker crusts

Strawberry Glaze:

• 2 cups fresh strawberries, chopped/divided

• ¼ cup sugar

• 1 tbsp cornstarch

• 2 tbsp water

Instructions

1 Preheat oven to 325°F (163°C).

2 Make filling: Beat cream cheese until smooth. Add sugar and vanilla; mix well. Beat in eggs one at a time on low speed just until combined.

3 Assemble: Place mini crusts on a rimmed cookie sheet. Fill each with batter. Set the sheet in a larger pan and add hot water until it reaches 1 inch up the sides.

4 Bake 15–20 minutes until centers are set but still slightly jiggly. Cool in the oven with door cracked for 10 minutes, then remove.

5 Make glaze while cooling: In a saucepan, combine 1 cup strawberries and sugar. Mash lightly. Whisk cornstarch with water and stir in. Simmer 3–5 minutes until thick and glossy. Stir in remaining strawberries. Cool to room temperature.

6 Finish: Spoon glaze over cooled cheesecakes. Refrigerate at least 2–3 hours (ideally 24 hours for best texture), though they can be eaten once fully cooled.

Store leftovers in the fridge up to 4 days. Enjoy!

... Read moreMaking mini strawberry cheesecakes is a fantastic way to impress guests with bite-sized indulgence that's both visually appealing and delicious. From my experience, one of the key tips for ensuring the filling comes out smooth and creamy is to use room-temperature cream cheese and beat it thoroughly before adding other ingredients. This prevents lumps and yields a velvet texture. Another pro tip involves baking the cheesecakes in a water bath, as recommended, which keeps the edges from cracking and maintains moisture. I usually carefully wrap the outside of the baking pan with foil to avoid leakage and to prevent water from seeping into the mini crusts. For the strawberry glaze, using fresh, ripe strawberries makes a noticeable difference in flavor and color. I like to mash some of them to release natural sweetness and texture while leaving some pieces whole to add chunkiness atop each mini cake. Letting the glaze cool fully before spooning it over the cheesecakes helps it set nicely without melting the filling. In addition, chilling the cheesecakes for at least 24 hours in the refrigerator enhances their texture and depth of flavor. This resting period allows the flavors to meld beautifully and the glaze to firm up. If you're looking to customize, you can swap the graham cracker crusts with crushed digestive biscuits or add a hint of lemon zest to the filling for a fresh twist. These mini strawberry cheesecakes are perfect for celebrations, afternoon tea, or simply treating yourself with a sweet and tangy dessert that's easy to share.
