Juicy, flavorful, perfectly charred carne asada with that fresh citrusy marinade. This one is a MUST for taco night! 🤤

🥩 Ingredients

* 2 lbs skirt steak or flank steak

* 1/2 cup orange juice

* 1/4 cup lime juice

* 1/4 cup olive oil

* 1/4 cup chopped cilantro

* 4 cloves garlic, minced

* 1 jalapeño, finely chopped

* 1 tsp cumin

* 1 tsp chili powder

* 1 tsp smoked paprika

* 1 tsp Mexican oregano

* 1 tsp salt

* 1/2 tsp black pepper

🌶️ Marinade

Mix everything together and pour over the steak. Cover and marinate for at least 2 hours, but overnight is even better!

🔥 Cook

Heat your grill or cast-iron skillet until HOT. Cook the steak for about 3–5 minutes per side, depending on thickness and how you like it. You want a beautiful char on the outside while keeping the inside juicy.

Let the steak rest for 5–10 minutes, then slice thinly against the grain.

Serve it up with warm tortillas, cilantro, diced onion, fresh lime, salsa, avocado—or just eat it straight off the cutting board because honestly… 🤷🏽‍♀️😂

SAVE THIS ONE FOR TACO NIGHT! 🌮❤️

... Read moreMaking carne asada at home is one of the most satisfying ways to enjoy a flavorful Mexican-inspired meal without having to go out. I’ve found that using skirt steak or flank steak works best because of their texture and ability to absorb marinades well. The secret really lies in a vibrant marinade made with fresh orange juice, lime juice, and a blend of spices like cumin, chili powder, and smoked paprika. These ingredients not only tenderize the meat but also add layers of bright and smoky flavor. From my experience, marinating the steak overnight in the refrigerator gives the best result—this allows the meat to soak up all those bold flavors thoroughly. When it’s time to cook, heating a cast-iron skillet until it’s screaming hot ensures you get that beautiful charred crust, which contrasts perfectly with the juicy interior. Cooking the steak for 3–5 minutes per side usually hits the right doneness, but keep an eye on the thickness. Once cooked, letting the steak rest for about 5 to 10 minutes is crucial for retaining the juices. Thinly slicing against the grain keeps the meat tender and easy to bite. Serving it with warm tortillas, freshly chopped cilantro, diced onions, and a squeeze of lime truly brings out the authentic taco flavor. One tip I love: don’t be shy with the jalapeño in the marinade if you like a little heat. It adds a subtle kick without overpowering the citrus notes. And for those who want to experiment, adding a splash of tequila or even a teaspoon of chipotle peppers in adobo to the marinade can give your carne asada a unique twist. Overall, this easy-to-follow carne asada recipe works well for family dinners or casual taco nights with friends. It’s a versatile dish that pairs wonderfully with guacamole, salsa, and a cold Mexican beer or agua fresca. Give it a try, and you’ll find it hard to go back to store-bought marinades!
