Quick & Easy Dinner for Two

I am having to learn to cook for two. I am so used to having a house full of kids and with my kids come friends. Now that my daughters have moved away for college it's just me and my favorite little boy. I am also embarking on a wellness and weight loss journey. So, this means cutting back and still making the things we like.

Air Fryer Chicken Breast

2 chicken breast (I get the fresh chicken packages at Sam's that come 2 in a pack)

I scored the chicken in a criss cross pattern to make lots of room for the seasonings to get down into.

I used salt, pepper, paprika and Sure Fire BBQ Chicken Charmer seasoning (it's ABSOLUTELY AMAZING). It is a small family owned business. www.surefirebbq.com

Put them in the air fryer at 380 degrees for 15 mins. Just make sure they reach 165 degrees.

Oven Roasted Green Beans

Preheat oven to 400 degrees

Small package of fresh green beans. Put them in a bowl and toss with olive oil, salt pepper and seasonings of your choice. I used a Holy Garlic seasoning that I found at Walmart. It is really yummy!!

Spread them out on a foil lined pan and cook for 15 mins. Removed them, sprinkle with parmesan cheese and bacon bits and cook for another 5-7 mins or until desired tenderness.

Great Value Artisan White Cheddar and Black Pepper is one of my son's favorite things. Just cooked according to directions. It's extremely flavorful. This was his special treat being I am on a low carb diet he was able to enjoy this all on his own and had some left for lunch tomorrow.
