Black beans burrito (vegan) Big hit in my family
RECIPE
-1 onion
-half red and half orange bell pepper
Cut in slices.
Sautée the onion 4-5mins.
Add the pepper and cook until softened.
-1 Tsp cumin and paprika
-salt and black pepper to taste
-1 can (220g) kidney beans
Keep frying on medium heat
Red salsa:
-1 red onion, chopped
-1/2 cup tomatoes sauce
-salt and pepper to taste
-1 Tbsp vinegar
-a pinch of sugar
Jalapeño
Orange sauce
2tbsp Mayo
1tsp sriracha
Few drops of lemon
Else:
-2 tortillas
-optionally: cooked rice (add cilantro and lemon drops)
Fill your burrito.
1- orange sauce
2-lettuce
3-cooked rice
4-blackbeans and bell pepper
5-avocado
6-red salsa
Roll it up and grill each side for 1-2mins
