... Read moreI've always loved how effortlessly delicious Watergate Salad is. It's one of those recipes that just screams 'easy win' for any gathering, and honestly, it’s become a staple in my home. But lately, I’ve been exploring beyond just the classic bowl, and it's amazing how many ways you can enjoy this vibrant green treat! For the foundation, the pistachio pudding mix is everything. I usually grab an instant variety – sometimes even a Great Value brand works perfectly, as long as it's the instant kind. The key is that vibrant green color and nutty-sweet flavor it brings. Don't skimp on a good quality mix, but don't feel you need to spend a fortune either; many store brands deliver great results for your pistachio pudding. When I'm planning a menu, Watergate Salad is incredibly versatile. It's not just for Thanksgiving anymore! I've served it chilled at summer BBQs alongside grilled chicken, brought it to potlucks as a refreshing side, and even just made a small batch for a weeknight dessert. It pairs surprisingly well with savory dishes, offering a light, sweet contrast. I love seeing people's faces light up when they spot that familiar green. One creative idea I stumbled upon, which might even satisfy those looking for ladyfinger sandwiches or just something a little different, is using Watergate Salad as a filling. Imagine gently spreading it between light, airy ladyfingers, creating mini dessert sandwiches! Or, for a simpler twist, serve small portions in elegant parfait glasses, perhaps layered with extra maraschino cherries or a dollop of whipped topping. It transforms a casual dish into something a bit more sophisticated, perfect for a tea party or brunch. And for those curious about the cottage cheese variation – yes, it's a thing! I tried it once, and it completely changes the texture, giving it a slightly tangier, more substantial feel. You simply fold in about a cup of small-curd cottage cheese along with the crushed pineapple and pistachio pudding mix. It makes the salad a bit more protein-rich and less overtly sweet, which some people absolutely adore. It’s worth experimenting if you're looking for a new take on an old favorite. No matter how you serve it, remember the basics for that perfect fluff: make sure your crushed pineapple is well-drained unless you prefer a looser salad. Fold in your mini marshmallows gently so they don't break down too much, and the whipped topping should be incorporated just until combined to keep it light and airy. A final garnish of a few extra maraschino cherries always makes it look extra special. Enjoy this delightful, easy dessert!

So many of the old fashioned salads line this one look a little unappetizing but gosh darn are they good! My grandma made one every Christmas with a can of mandarin oranges, can of pineapple, sliced banana and halved maraschino cherries, then add a can of apricot pie filling and mix, and you have a delight!
