Healthy High Protein College Lunch

Here is one of my favorite easy, healthy, high protein lunches! Cottage cheese avocado toast. 🥑 I eat this so much in college it’s delicious, convenient, and gets your protein in. 💪🏼✨

You only need a few ingredients:

- english muffin or bread (my fav is thomas’ buttermilk english muffins, SO GOOD)

- cottage cheese (good brand is THE BEST)

- lime

- avocado

- whatever seasonings you like (i use salt, pepper, onion powder, garlic powder, and cumin)

Steps:

1. Toast your bread and cut avocado

2. Add avocado, a squeeze of lime, and seasoning to your toast

3. Add cottage cheese

And you’re done! It’s that easy, literally takes maximum 5 minutes. Avocado and cottage cheese are SO good for you so this is a great nutritional lunch choice especially if you have limited time and ingredients as a college student like me. 💗
