What you need:
• 🍯 ¼ cup honey (80 g)
• 🧈 ½ cup butter, soft (115 g)
• 🥕 3 carrots, finely grated (250 g)
• 🍊 Zest of 1 orange
• 🍬 ½ cup sugar (100 g)
• 🥚 4 eggs
• 🌰 ½ cup walnuts + cranberries mix (60 g)
• 🌿 1 tsp cinnamon
• ☕ 1 tsp instant coffee
• 🧂 1 tsp salt
• 1 ½ cups flour, sifted (180 g)
• 1 tsp baking soda
Creamy swirl 🌀
• 🥯7 oz cream cheese (200 g)
• 🥛 ⅓ cup heavy cream (100 g)
• 🍬 3 tbsp sugar (40 g)
• ☕ (optional) 1 tsp coffee for a mocha swirl
How to make it :
1. Prepare the honey mixture
Place honey in a small saucepan over medium heat. Warm until light bubbles appear. Add the baking soda — the mixture will foam up. Stir until it turns golden.
2. Mix the batter
Add butter to the honey mixture, stir until melted. Add grated carrots, chopped nuts & cranberries, cinnamon, and orange zest
3. Whip the eggs
In a separate bowl, beat the eggs with sugar until pale and fluffy. Sift in the flour and salt, then gently fold into the honey-carrot mixture.
