Lao Comfort in a bowl 🥣 ❤️

In Lao culture, this rice soup is often called Khao Piak Khao. It’s the ultimate "clean out the fridge" meal that tastes like a warm hug.

I’m using leftover jasmine rice, and the process is much faster because you don't have to wait for raw grains to break down.

The Quick Comfort Ratio:

For 1½ cups of cooked rice, you’ll want about 4–5 cups of liquid (a mix of chicken broth and water) depending on how thick or soupy you like it.

What you’ll need:

* The Base: 1½ cups leftover Jasmine rice.

* The Liquid: 3 cups chicken broth + 1½ cups water.

* The Aromatics: 2 cloves of garlic (smashed and fried until golden brown)

* Seasoning: 1 tbsp soy sauce (or to taste), and a dash of white pepper (optional)

Let’s make it:

* Simmer the Base: In a medium pot, combine the chicken broth, water, Bring it to a gentle boil.

* Add the Rice: Add your leftover jasmine rice. Use a spoon to break up any large clumps.

* Thicken: Turn the heat down to medium-low. Let it simmer for about 10–15 minutes. Since the rice is already cooked, you are just waiting for the grains to "bloom" and soften until the soup gets a slightly silky, starchy texture.

* Season: Stir in the soy sauce and fried garlic.

Optional:

* The "Lao Way" Toppings:

* Crispy Fried Garlic or Shallots (the most important part).

* Fresh Cilantro and Scallions (chopped).

* A squeeze of Lime (adds brightness).

* Chili Oil or Sriracha (for heat).
