Pandan Coconut Sticky Rice

Ingredients

• 2 cups glutinous rice (sweet rice)

• 1 ½ cups coconut milk

• ½ cup sugar

• ½ tsp salt

• 1 tsp pandan extract (for color and flavor)

• 3–4 pandan leaves, tied in knots

Instructions

1. Soak the Rice

• Wash the glutinous rice until water runs clear.

• Soak in water for 4–6 hours or overnight.

2. Steam the Rice

• Drain the rice and place it on a steaming cloth like in your photo.

• Add pandan leaves on top for fragrance.

• Steam for 20–25 minutes.

3. Make Coconut Sauce

In a small pot:

• Heat coconut milk, sugar, salt, and pandan extract.

• Stir until sugar dissolves (do not boil).

4. Mix

• Pour half of the coconut sauce over the hot sticky rice.

• Mix gently and let it absorb for 10–15 minutes.

5. Serve

• Serve warm with extra coconut sauce on top.
