I've always embraced the 'Eat the Rainbow' approach to nutrition, but recently I decided to take it a step further by bedazzling my veggies—especially carrots. Not only do carrots naturally bring a vibrant orange to my plate, but they're also packed with nutrients that make them a nutritional powerhouse. Carrots are rich in beta carotene, which our bodies convert into vitamin A, essential for vision and immune system support. One aspect I've truly noticed is how their high fiber content aids digestion and helps maintain gut health. For anyone struggling with digestive issues, integrating more carrots into meals can be a flavorful and beneficial change. To make eating carrots more fun and visually appealing, I experimented with creative presentations, adding edible glitter and colorful garnishes. This ‘bedazzling’ not only makes meals more exciting but also encourages mindful eating, making me appreciate each bite more.
