For the eggs - pull the eggs out of the fridge early, leave them on your counter for 30 min or so to get to room temp. Bring water to a boil, and once it’s boiling add the eggs, boil for 6 min for medium eggs, 7 for large. While this is going on get a bowl of ice water. Once the times up you have to chill them. This will make it easier to peel (use a spoon) and also you CANNOT peel soft boiled eggs, they have to chill them to firm up a bit.

For the marinade sauce - add ingredients and heat up in a sauce pan, you aren’t boiling it and you aren’t simmering it. Just bring it up and stir to melt the sugar and a little bit of heat is going to help activate the aromatics.

1/2 cp soy

1/4 cp sugar

2 cloves garlic (I prefer slice, minced looks messy)

Scallions

Thai chili aka Bird’s eye chili

Sesame seeds

Marinate for a day
