Okay, this is not for everyone but if you like cabbage or kale salads, I encourage you to also try a shaved brussel sprout! Not only is this perfectly seasonal as a salad, but I pair it with a cranberry honey mustard that is TO DIE FOR its so good, I would literally coat this on any meal its that good. Add in some chopped pecans and feta and boom - a great gluten free option. Make it vegan even with a dairy-free feta!

Similar to cabbage or kale in texture, these sprouts offer a mild, slightly nutty flavor that shines when thinly sliced. What makes this salad stand out is the vibrant cranberry honey mustard dressing, which balances sweetness and tang, elevating the natural taste of the Brussels sprouts. Adding chopped pecans introduces a satisfying crunch and a dose of healthy fats and protein, making this dish more filling. Feta cheese adds a creamy, salty contrast; for vegans, dairy-free feta alternatives are a perfect substitute, keeping the salad both delicious and inclusive. This salad fits well within gluten-free diets, free of any gluten-containing ingredients, and is suitable for vegetarians and vegans alike. Beyond being delicious, Brussels sprouts are rich in vitamins C and K and antioxidants, making this salad a healthy holiday option. For best results, ensure the Brussels sprouts are very thinly shaved to maximize tenderness and flavor absorption. The cranberry honey mustard is versatile and can be adapted to your taste preferences by adjusting the sweetness or tanginess. This salad not only serves as a vibrant side dish but can also be a standalone light meal. Its seasonal ingredients make it perfect for holiday gatherings, offering a fresh alternative to heavier dishes often seen at festive occasions.
