Now this was a fun and tasty meal thanks to Chef Reid and the entire team at Schilling Canning Company in Washington DC. There’s a lot of great dishes on the menu highlighting ingredients from around the Chesapeake and Mid-Atlantic region but I left the choices up to chef and his very filling 7 course tasting menu. The fish dish was wood fired trout, charred cabbage, cobbled potatoes and trout caviar butter.
