• 1 cup cooked lentils
• 1 cup cooked brown rice
• 1 tbsp ground flaxseed + 3 tbsp water (flax egg)
• 1 small onion, finely chopped
• 1 cup mushrooms, finely chopped
• 1 cup celery, finely chopped
• 1 cup carrot, finely chopped
• 2 cloves garlic, minced
• 1 tsp salt
• 1/2 tsp black pepper
• 1 tsp dried thyme
• 1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
• 1 tbsp soy sauce
• 1 tbsp vegan Worcestershire sauce
• 1/2 cup breadcrumbs
For the Glaze:
• 1/4 cup ketchup
• 2 tbsp maple syrup
• 1 tsp soy sauce (optional)
Instructions
1️⃣ Preheat your oven to 375°F (190°C) and grease or line a loaf pan.
2️⃣ Sauté onion, mushrooms, celery, and carrots until softened. Add garlic and cook for 1 minute.
3️⃣ In a bowl, mash cooked lentils, then mix in cooked veggies, brown rice, flax egg, breadcrumbs, soy sauce, Worcestershire sauce, and spices.
4️⃣ Press mixture into the loaf pan and bake for 25 minutes.
5️⃣ Mix glaze ingredients and spread on top of the loaf. Bake another 15-20 minutes.
