Fruity Pebbles Cheesecake Bars Recipe

Ingredients

- 1 roll (18 oz) refrigerated sugar cookie dough, at room temperature

- 8 oz cream cheese, softened

- 1/2 cup Post Fruity Pebbles cereal

- 1/2 cup granulated sugar

- 1 large egg, at room temperature

- 1 tsp vanilla extract

Instructions

1. Preheat the Oven:

- Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper for easy removal.

2. Prepare the Cookie Dough:

- In a medium bowl, combine the softened sugar cookie dough with the Fruity Pebbles. Using a hand-held mixer, blend the two until they are thoroughly mixed.

3. Create the Base Layer:

- Take a little over half of the Fruity Pebble cookie dough mixture and press it evenly into the bottom of the prepared baking dish to form a solid layer.

4. Make the Cheesecake Filling:

- In a separate bowl, beat the softened cream cheese with a hand-held mixer until it’s light and fluffy. Gradually add the granulated sugar and mix until well combined. Then, add the egg and vanilla extract, beating until the mixture is smooth.

5. Assemble the Bars:

- Pour the creamy cheesecake filling over the layer of Fruity Pebble cookie dough in the baking dish. Crumble the remaining cookie dough on top of the cheesecake layer.

6. Bake:

- Place the baking dish in the oven and bake for 35-40 minutes, or until the edges are set.

7. Cool and Serve:

- Allow the bars to cool completely in the baking dish before cutting them into squares.

8. Storage:

- Store any leftovers in an airtight container in the refrigerator.
