Ingredients
• 5-6 large russet potatoes, peeled and cut into chunks (my husband likes the skin, so I peel and leave small areas of skin on the potatoes.)
• 4 tablespoons unsalted butter
• 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
• ½ cup milk (adjust for desired creaminess - I like my potatoes creamy, so I typically add 3/4 cup at minimum. Start with less, you can always add more if needed.)
• 2–3 scallions (green onions), finely sliced (white and green parts)
• Salt and black pepper, to taste

Instructions
1. Boil the Potatoes:
Add chopped potatoes to a large pot, cover with cold water, and season with salt. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
HEAR ME OUT: I boil my potatoes the same way I boil my corn on the cob - I typically add 1/2 cup of milk and 2 tbsp of butter to the water prior to boiling. In my opinion, this does two things:
• The milk and butter can infuse some richness into the potatoes.
• Less flavor is lost compared to boiling in just water.
If you’re not about this technique, just boil the potatoes as normal in water with salt.
2. Drain & Dry:
Drain the potatoes thoroughly. Return them to the hot pot and let them sit uncovered for 2–3 minutes to release steam.
3. Mash:
Add butter to the hot potatoes and begin mashing. Then add the Boursin cheese and milk. Continue mashing until smooth and creamy.
4. Stir in Scallions:
Gently fold in the sliced scallions. Add salt and pepper to taste.
5. Serve:
Transfer to a serving bowl. Garnish with extra scallions or a small pat of butter, if desired.
