BIG BACK BUTTER PECAN CAKE 🎂🧈

Rating:40/10

Time: 40 Minutes

Back Status: Enormous

This cake is pretty easy! I like to make things simple but also to the point where nobody can tell it is box cake mix. That’s our business🤫🤣

Ingredients

🎂2 boxes of yellow/butter cake mix

🎂2 sticks of butter

🎂2 cups of milk

🎂2 hefty scoops of sour cream

🎂Eggs (read the box)

🎂2 Butter pecan icing in the container

🎂3 Buttercream frosting in the container

🎂Caramel sauce

Directions:

🎂We follow the boxed cakes recipe BUT with a twist! This makes a four layer cake! Cut it in half if you only want two to save a couple inches off your back!

🎂Sub oil for brown butter (whatever amount of oil, sub it for brown butter you can look up equivalence of whatever measurement of oil is to butter)

🎂Sub water for milk

🎂Add two hefty spoons of sour cream, one for each box mix

🎂Bake cake

🎂Microwave the butter pecan frosting for about 30 seconds til slightly pourable

🎂Take cake out and cool

🎂Once cake is cool, let’s start assembling

🎂Each layer gets buttercream and a slight drizzle of butter pecan!

🎂Once all layers are complete then cover the rest of the cake in buttercream frosting

🎂I lined the edges with more butter pecan frosting. You can decorate how YOU want it to look, that aint got nothin to do with me

🎂I was extra and made homemade caramel but you can drizzle the store bought stuff and it still hits. I used a small little spoon to make the cute swirl on top!

🎂Grab a fork, ice cream, and come to terms with the increase of said BACK!

Enjoy! Let me know how it turns out for you! 😘🧈

... Read moreYou know, there's just something magical about a cake that tastes like it took hours, but actually started with a simple box mix! That's my kind of baking, especially when it comes to something as decadent as a Butter Pecan Cake. We all love that rich, nutty flavor, right? But if you're like me, sometimes you want to take it up a notch without spending all day in the kitchen. That's where 'doctoring' a box mix comes in, and trust me, it's a game-changer for achieving that sought-after 'big back' dessert status! Beyond just swapping in milk and sour cream, which are fantastic steps, there are so many ways to turn a basic pecan cake mix into a masterpiece. For instance, have you ever tried adding a small box of instant vanilla or butterscotch pudding mix to your cake batter? It makes the cake incredibly moist and adds another layer of flavor. Another trick I swear by for any cake with nuts is to lightly toast the pecans before adding them to the batter or using them as a topping. It really brings out their natural aroma and crunch. For that beautiful 'textured pecan border' we see on fancy cakes, just gently press toasted, chopped pecans around the base of your frosted cake. It looks professional and tastes amazing! Now, let's talk frosting and toppings, because honestly, that's where a lot of the magic happens. While store-bought icings are convenient, and I use them often, sometimes you might want to try a homemade option to truly elevate your butter pecan cake. A classic brown butter cream cheese frosting, for example, would be absolutely divine. Just brown some butter, let it cool slightly, then beat it with cream cheese, powdered sugar, and a splash of vanilla. It pairs perfectly with the nutty flavor of the cake and provides a lovely 'cream topping' experience. And for that gorgeous 'swirled caramel' effect? If you're not making homemade caramel, warm up your store-bought sauce just slightly so it's easily pourable, then use a spoon to drizzle it artistically over the cake. A little sprinkle of sea salt can even enhance the caramel flavor! For those of you who love the idea of 'southern cake recipes' or just want to further boost that butter pecan goodness, consider adding a touch of butter pecan extract or emulsion to your batter. It really intensifies the flavor profile. And when it comes to fats, using brown butter in the batter, as we did, is key. It adds a deep, nutty, caramelized note that you just can't get with regular oil or butter. It’s these little tweaks that make people wonder if you secretly went to pastry school! Finally, don't forget the presentation and the pure joy of indulging! A slice of this rich cake, perhaps warmed slightly, served with a scoop of vanilla bean ice cream (or even more butter pecan ice cream!), is truly a dream. It's a dessert that invites you to sit back, relax, and savor every single bite. So go ahead, embrace the 'big back dessert' philosophy – life's too short for bland cake!
