BIG BACK BUTTER CAKE WITH PEACH COMPOTE

Rating 10/10

Time: 1.5 hours

Back Status: Bigger than a $5 BIGGIE bag from Wendy’s

We are BIG back and better than ever 🤣 with a butter cake with peach and vanilla bean compote and vanilla bean whip cream frosting 🧈

First, I am having too much fun trying to find ways to say big back!

Ingredients

🍑6-7 Peaches (In Season)

🍑Vanilla Bean Pods

🍑Butter box cake mix!

🍑Sour Cream

🍑Eggs

🍑Butter

🍑Milk

🍑Honey (optional)

🍑Whipping Cream

Recipe:

🍰Start by making the cake, we know what to do!

🍰Sub water for milk

🍰Sub oil for butter

🍰Add two HEFTY dollops of sour cream (one per box)

🍰Mix all together and throw it in the oven

🍰While cake is baking, let’s make peach compote

🍰Dice up 6 of the 7 (peeled) peaches and place in a pot

🍑HACK: to peel peaches easily, cut a cross in them (not too deep) on both ends and placed in boiling water for just a moment. Once out the water peel the skin rifht off!

🍰Start cooking the peaches on medium heat

🍰Add some vanilla bean pod, a little bit of vanilla extract if that’s what u got and honey 🍯 if you like that, sugar if you want it sweeter

🍰Once it becomes this thickish compote let it be and cool down

🍰Take cake out and let it cool

🍰Start on the whip cream, add some vanilla bean pod and sugar or honey and WHIP it like Kendrick is whoopin Drake’s tail rn!!! 🤣🤣

🍰Once cake is cool, let us assemble

🍰Between each layer should be that delicious compote.

🍰If you make a lot of whip cream, add some in between too!

🍰Cover the entire thing in whip cream frosting

🍰Slice the remaining peach thinly in cute half moons or whatever shape you want!

🍰Decorate the cake!!!

I made this cake for my cousins birthday and she LOVED IT! My back is not too bad, but it def got a teeeeeeeeeeny bit wider 🫲🏽 🫱🏽after one slice of this!

Go and make it! Let me know how it turn out and if we fooled anybody thinking it was a sift flour, measure baking soda kinda cake! 🤣❤️

... Read moreOkay, so you've seen the recipe for this incredible Butter Cake Vanilla Bean + Peach compote creation, but let's dive even deeper into what makes this dessert truly legendary and why it earns its 'big back' status! For me, a 'big back' dessert isn't just about the size of the slice; it's about that unapologetic, full-on indulgence that makes you close your eyes and just savor every single bite. This cake? It absolutely delivers! First off, the secret sauce to turning a simple box mix into a gourmet dream is truly those little hacks. Adding sour cream? Game changer! It injects so much moisture and a slight tang that perfectly balances the sweetness, making the cake crumb incredibly tender, almost like it’s from scratch. And swapping oil for butter? That’s where the rich flavor truly deepens. I’ve tried this with a few different box mixes, and a good quality yellow or butter cake mix works wonders. Don't be shy with those generous dollops of sour cream – trust me, it’s worth it! Now, let's talk about that Peach Compote. While fresh, in-season peaches are divine, I've also had amazing results using frozen peaches when fresh aren't available. Just thaw them slightly first. To really elevate the flavor, consider adding a pinch of cinnamon or a tiny dash of almond extract along with that vanilla bean. It gives the peaches an even warmer, more complex profile that sings with the butter cake. The hack for peeling peaches quickly? Absolutely brilliant! I used to dread peeling them, but that boiling water trick is a lifesaver. And the vanilla bean whipped cream frosting? Oh my goodness. If you want to take it up another notch for an extra 'big back' experience, try folding in a couple of tablespoons of softened cream cheese or mascarpone into your whipped cream before whipping it. It stabilizes the cream wonderfully and adds a luxurious richness that's out of this world. Imagine that creamy, slightly tangy frosting alongside the sweet peaches and moist butter cake – pure heaven! For serving, while it’s delicious chilled, I sometimes like to warm a slice slightly in the microwave for about 15-20 seconds. It makes the compote a little gooey and the cake incredibly soft, perfect with a scoop of vanilla bean ice cream or even a drizzle of caramel sauce for ultimate decadence. This cake isn't just a dessert; it's an experience. It’s the kind of treat you make when you want to truly spoil yourself and your loved ones, proving that 'easy' doesn't have to mean 'less delicious.' My friends always ask for this recipe after trying it, and they can never believe it started with a box mix!
