Being a private chef for an NFL player is definitely a unique experience, a constant balancing act between culinary creativity and strict nutritional requirements. My days typically kick off early, just like any other professional role, but with the added pressure of fueling an elite athlete. Take a recent morning, for example: by 10:44 am, I was already deep into lunch prep. First up, getting those potatoes ready for some crispy fries. I've learned that even comfort foods can be nutritious with the right approach – think double-baked fries for that perfect crunch without excess oil. While they were in the oven, I'd often be organizing and putting away groceries from an early morning pick-up, ensuring everything is fresh and in its place. Around 11:26 am, the fries are in, and it's time to marinate chicken for the main course. It's a multi-step process, often involving searing tenders to perfection, creating delicious blackened tenders served alongside a vibrant cabbage slaw and those irresistible crispy baked fries. After ensuring lunch is served and the kitchen is tidy, I usually get a brief lunch break. Sometimes, it's a quick bite, or if family is in town, it might be a special outing, like grabbing chili's with my mother and brother before they head back home. But the chef's hat never truly comes off! My afternoons are often filled with administrative tasks. I might head to a coffee shop around 3:40 pm for meetings, admin, and editing content for my social channels – yes, even chefs have their digital duties! Then comes another round of grocery pick up around 4:57 pm, planning for upcoming meals and making sure the pantry is always stocked with the freshest ingredients. The evening transitions into kitchen manager duties and breakfast meal prep for the next day. Thinking ahead is crucial – planning balanced meals, considering dietary needs, and ensuring everything is streamlined. By 6:17 pm, it’s time to plate dinner. A recent favorite was a wholesome sage chicken sausage & mozzarella protein pasta, designed to be both delicious and packed with the right nutrients for recovery. Finally, after a long day, it’s home, maybe to post videos and share a glimpse of this incredible journey. This life is challenging, but the joy of seeing an athlete thrive on the meals I prepare, and the constant learning (even about trekking through a city like Porto!), makes every moment worthwhile.
