This technique significantly improves the texture, making the donuts incredibly fluffy and moist rather than dry or dense. One tip I’ve learned through experience is to humid-proof the dough. This means keeping the dough in a slightly moist environment during proofing to retain suppleness and prevent it from drying out. It truly makes a difference in the final texture. For the glaze, I blend frozen strawberries with powdered sugar and a touch of milk to create a creamy, flavorful coating that complements the light, airy donuts perfectly. Using frozen strawberries is convenient and gives a vibrant color and fresh taste all year round. An essential tool in my kitchen is a digital kitchen thermometer. Frying doughnuts can be tricky because the oil temperature needs to be just right—too hot and the outside burns before the inside cooks; too cool and the donuts absorb too much oil and become greasy. A thermometer helps you maintain that perfect frying temperature every time, ensuring beautifully golden, light donuts. After frying, I like to let the glaze set for a while. Sometimes, I’ll microwave a glazed donut for about seven seconds to serve it warm. The glaze cracks deliciously, and the donut tastes fresh and indulgent.
