Vegan Lentil Bolognese (Hearty & Comforting)

Ingredients

• 1 cup dry brown or green lentils (or 2 cups cooked)

• 12 oz pasta of choice (penne, rigatoni, or spaghetti)

• 1 tbsp olive oil or avocado oil

• 1 small onion, finely chopped

• 3 cloves garlic, minced

• 1 carrot, finely diced

• 1 celery stalk, finely diced

• 1 cup crushed tomatoes or tomato sauce

• 2 tbsp tomato paste

• 1 tsp dried basil

• 1 tsp dried oregano

• ½ tsp smoked paprika

• ½ tsp garlic powder

• Salt and black pepper to taste

• 1–2 tbsp nutritional yeast (optional, for umami)

• ½ cup vegetable broth or pasta water

• Fresh parsley or basil for garnish

Instructions

1️⃣ Cook the lentils

Rinse lentils and simmer in water for 20–25 minutes until tender but not mushy. Drain and set aside.

(Skip this step if using cooked lentils.)

2️⃣ Boil the pasta

Cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.

3️⃣ Build the sauce

Heat oil in a large pan over medium heat.

Add onion, carrot, and celery. Sauté 5–7 minutes until soft.

Add garlic and cook 30 seconds until fragrant.

4️⃣ Season & simmer

Stir in tomato paste, crushed tomatoes, basil, oregano, smoked paprika, garlic powder, salt, and pepper.

Add cooked lentils and vegetable broth.

Simmer 10–15 minutes, stirring occasionally.

5️⃣ Finish & combine

Add cooked pasta to the sauce.

Splash in pasta water if needed to loosen.

Stir in nutritional yeast if using.

6️⃣ Serve

Garnish with fresh herbs and enjoy warm.
