Lighter on Carbs: Traditionally, cheddar broccoli soup can rely heavily on flour and milk for thickness and creaminess. Here, we reduce or omit flour and use a small amount of a thickener like arrowroot or just blend part of the soup to create a creamy texture. Using unsweetened almond milk or a small amount of half-and-half instead of heavy cream lowers saturated fat and total carbs.
Protein & Flavor: High-quality cheddar provides protein and calcium, and by controlling portions and adding a lean protein garnish (like shredded chicken or tofu cubes if desired), we maintain a more balanced macronutrient profile.

Ingredients:
1 Tbsp avocado or olive oil
1 small onion, finely chopped
1 celery stalk, finely chopped

Instructions:
