What I Eat: Lazy Self prep

Ever since i reach plataeu for the longest time ever, I have been slowly changing out what i eat over the last few months because i needed a break from eating the same stuff and i got kinda lazy boiling brocollis and eggs 🫢😅

To make my meals less “boring”, i tried to change out some of the ingredients, but still prioritizing whole food.

Lately i have been into making my own “big breakfast” as for my meals and im loving it!! 😋

Main ingredients:

- gardenia gourmet selections ciabatta / panini

- frozen chicken breast / ham (❗️chix b > ham)

- cherry tomatoes (expensive 🥲)

- scramble eggs

- portobello / any mushrooms (toast / pan grill)

- cottage cheese (for extra protein)

- truffle brie spread (optional but its gd! 🫢)

It’s slightly higher calories / fats due to the switching from wrap to bread and the added brie, but i still ensure there’s minimally 20g protein in my meal. I love cottage cheese so i have no issues eating it on its own or with anything!

I started to look forward to prepping my meals again and eating them again! I was sticking to the same types of food for months and was lazy to whip up diff stuff every other day. However, boredom took over and i know i needed a change to enjoy what i eat again. Eating healthy doesn’t mean you need to eat boring / plain food all the time!

... Read moreWhen you've been on a fitness journey for a while, hitting a plateau can be frustrating. One way I overcame this was by rethinking my meal prep approach—especially when I started feeling lazy about cooking repetitive meals like boiled broccoli and eggs. Instead of sticking to plain foods, I switched to a more indulgent but still balanced breakfast. Incorporating ingredients like ciabatta bread, frozen chicken breast, portobello mushrooms, and a touch of truffle brie spread kept my meals exciting without sacrificing nutrition. A key tip is to prioritize protein—aim for at least 20 grams per meal—to support muscle maintenance and satiety. Using cottage cheese is an easy way to boost protein without adding excessive calories, plus it tastes great on its own or mixed in. Don't shy away from small indulgences like brie; healthy eating doesn't have to be boring or bland. I noticed that changing my meal components not only helped break my plateau but also made me look forward to prepping and eating again. If you find yourself stuck eating the same foods, try swapping staples like wraps for gourmet paninis or adding nutrient-rich veggies like cherry tomatoes and mushrooms. Even if some ingredients are pricier, the variety and enjoyment they bring can make your healthy lifestyle sustainable and fun. Finally, remember that meal prep doesn’t require elaborate cooking—simple grilling, toasting, or scrambling can create delicious meals. Meal prepping big breakfasts that combine protein, healthy fats, and whole foods can fuel your day efficiently. Incorporate creative twists and prioritize enjoyment alongside nutrition for long-term success on your health journey.
