Broccoli+Roasted Garlic Pesto Pizza with Feta

This is officially one of my new favorite meals 🤤🥰 I started cooking about 2 years ago; recently, I’ve eaten at more restaurants than I have at home and I’m aiming to change that!! Let me know what you think and if you’d like to see more content related to this. 🥰👩‍🍳

2 Ingredient Pizza Crust:

•oat flour 🍞

(or regular if you don’t mind the gluten😌) (try self rising flour)

•plain Greek yogurt 🥣

mix until you get dough, lay parchment paper on a baking sheet and roll the dough to your desired thin/thickness.

Bake on 375 for 15 min, then add toppings and bake for another 10 min-ish (when it looks done, it’s probably done 😉)

^this recipe goes for any time you use the 2 ingredient pizza crust 🥰

-Roast garlic and broccoli together

-Bake the crust on its own for 15 min

-Add broccoli, garlic, pesto, a drizzle of olive oil and feta cheese to crust

-Bake for another 10 min

-Add Parmesan cheese and chopped green onion

-Bake until the cheese melts

-Enioy! 🥰🥰🥰🥰

**I’m not good as good at writing recipes as I would like to be, but don’t hesitate to ask questions 😅**

... Read moreOkay, so you've tried the Roasted Broccoli & Garlic Pesto Pizza with Feta, and you loved it, right? I know I did! There’s something so satisfying about making a delicious, healthy meal from scratch, especially when the base is a super simple 2-ingredient crust. But what if you want to switch things up a bit, or perhaps you're wondering how to make this recipe even more versatile? Let me share some of my favorite hacks and variations! First off, that 2-ingredient crust? It’s a game-changer! If you're sensitive to gluten, using oat flour is fantastic, but don't be afraid to experiment. You can even use self-rising flour for an extra fluffy base. The beauty is you can roll it thicker for a chewier pizza or thinner for a crispier, almost flatbread-like experience. Speaking of flatbreads, this recipe adapts perfectly! Just roll your dough thinner, maybe into a rectangle, and follow the same topping and baking instructions for an amazing broccoli flatbread pizza that’s way better than anything store-bought. Now, for the star toppings. Roasting the broccoli and garlic really brings out their natural sweetness and depth. My secret for perfectly roasted veggies? Don't overcrowd the pan! Give them space to get nicely caramelized. A drizzle of olive oil, a pinch of salt, and a good roast at 375°F until tender-crisp is key. And don't forget the garlic – whole cloves roasted until soft and sweet are a revelation! Let's talk pestos. While a classic basil pesto is divine, don't limit yourself! Sun-dried tomato pesto or even a spinach pesto could add a fun twist. If you're short on time, a good quality store-bought pesto works wonders. Just make sure it's fresh and vibrant. Cheese, glorious cheese! The feta adds that perfect tangy, salty kick. But after it comes out of the oven, I always add a generous sprinkle of freshly grated Parmesan cheese – it melts beautifully from the residual heat and adds another layer of savory goodness, just like the picture shows. For an extra pop of flavor and a little heat, a sprinkle of red pepper flakes after baking is a must for me. It really elevates the whole dish! And those vibrant green onions you see in the pictures? They're not just for garnish; they add a fresh, mild oniony bite that complements the richness of the pesto and cheese. For those who love a hearty meal, consider adding some cooked chicken or crumbled Italian sausage before the final bake. Or, for a vegetarian protein boost, some chickpeas or white beans would be delicious. Other veggie additions like thinly sliced red onion, cherry tomatoes, or even some mushrooms would be fantastic. Have you ever grabbed one of those Trader Joe's frozen pizzas for a quick meal? This homemade version is just as easy, often healthier, and tastes miles better. You can even prep all your toppings ahead of time – roast the broccoli and garlic, chop the green onions, crumble the feta – and then assemble and bake whenever that pizza craving hits. It truly makes weeknight cooking a breeze. This recipe is so adaptable, and I hope these tips inspire you to make it your own. Happy cooking!
