🍚 Mexican Rice
🧾 Ingredients
• 1 cup white rice
• 2 roma tomatoes
• 1 small piece onion
• 2 garlic cloves
• 1 jalapeño (optional)
• 1 tbsp tomato bouillon
• 1 tbsp chicken bouillon
• 2 cups water (total liquid matters!)
• 2–3 tbsp oil
🥣 Step 1: Make your sauce
Grill than blend:
• tomatoes
• onion
• garlic
• jalapeño (just grill and don’t blend add to the top of rice with the soup water)
• 1 cup water
🍳 Step 2: Toast the rice (VERY important)
• Heat oil in pan (medium heat)
• Add dry rice
• Stir constantly until:
• slightly golden
• smells nutty
🍅 Step 3: Add the sauce
• Pour in your blended mixture with a strainer
💧 Step 4: Add remaining liquid + seasoning
• 1 more cup water (this makes total 2 cups liquid)
• tomato bouillon (1 tbsp)
• chicken bouillon (1 tbsp)
👉 Taste the liquid here — it should taste a little salty/flavorful (that’s how rice absorbs flavor)
🌶 Step 5: Add jalapeño (optional)
• Toss it in whole
• Gives flavor without making it too spicy
🔥 Step 6: Cook the rice
• Bring to a boil
• Once boiling → LOW heat + cover
• Cook 15–20 minutes
• DO NOT stir ❌
💤 Step 7: Let it rest
• Turn off heat
• Let sit covered for 5–10 minutes
• Then fluff with fork
