Spaghetti Verde con Milanesa de Pollo✨

Okay so I’ve never had this before but I was at my favorite Mexican market yesterday with my kids fully prepared to make loaded baked potatoes for dinner and then out of nowhere I started craving “Mexican spaghetti” 😂

I love food , period however with 8 kids , I’m sure you can imagine , we don’t eat out very often but that doesn’t stop me from bringing those foods home though . I like to think I’m a chef 💀 and I am (in my house)

Anyway I had to guess the ingredients because my data was acting weird but I actually did end up getting all the right things (genuinely just through all the peppers and veggies into the cart because “I know it’s some of these .” I’m so proud of the way my spaghetti verde con milanesa de pollo turned out 🩷

... Read moreOkay, so let me tell you more about this amazing dish that totally stole my family's hearts – Spaghetti Verde con Milanesa de Pollo! When I said I was craving 'Mexican spaghetti,' this is exactly what I pictured. It’s such a fantastic twist on classic pasta, and pairing it with crispy chicken milanesa just takes it to a whole new level of comfort food. For those who haven't tried it, let me break it down a bit. The 'Spaghetti Verde' literally means 'green spaghetti,' and that vibrant color comes from a rich, creamy sauce usually made with roasted poblano peppers, sometimes jalapeños for an extra kick, a bit of garlic, cilantro, and often Mexican crema or sour cream, and some cheese. It’s earthy, a little smoky, and incredibly flavorful – not spicy hot, but warmly spiced. When I was throwing those peppers and veggies into my cart, I knew I needed that unique roasted pepper flavor to get it just right. It’s what gives the dish its soul! Then you have the 'Milanesa de Pollo.' If you've never had milanesa, it's essentially a breaded cutlet, usually pounded thin, then fried until golden and crispy. 'De Pollo' just means it's made with chicken. Think of it like a Latin American schnitzel or chicken fried steak, but with its own distinct seasoning. The crunch of the milanesa against the silky green spaghetti is just *chef's kiss*! It adds such a wonderful texture and protein boost, making it a complete meal that even my pickiest eaters can't resist. Making this for my eight kids means I'm always looking for ways to make it delicious and manageable. My secret? Don't be afraid to experiment with the sauce ingredients. While I did guess some, I focused on getting those key flavors like roasted poblanos. You can roast them in the oven or on a comal until soft, then peel and blend them with your other sauce ingredients. For the milanesa, pounding the chicken thin is key for even cooking and maximum crispiness. I always season my breadcrumbs well – garlic powder, onion powder, paprika, and a touch of oregano go a long way. This meal is just perfect for family dinners. It’s hearty, comforting, and feels a little special without being overly complicated. Plus, you can often prep some components ahead of time, like making the green sauce, which saves a lot of time on a busy weeknight. It truly brings that restaurant-quality taste right into your home kitchen, and seeing my kids enjoy it so much makes all the effort worth it. If you're looking for a new family favorite that's packed with flavor, definitely give Spaghetti Verde con Milanesa a try!
