Ingredients:
• Chicken legs & thighs (washed & cleaned)
• 1 yellow onion
• Creole seasoning
• Garlic powder
• Onion powder
• Bay leaves
• Paprika
• Italian seasoning
• Olive oil
• 1 stick of butter
• Better Than Bouillon Roasted Chicken
• Water
Instructions:
1. Season Chicken: Season your washed and cleaned chicken with garlic powder, onion powder, paprika, Italian seasoning, and Creole seasoning. Drizzle some olive oil and mix well to evenly coat the chicken. I let mine marinate overnight, but you can proceed directly if desired. Note: I didn’t use exact measurements, just seasoned to my liking.
2. Prepare to Bake: Preheat the oven to 350°F (175°C). While it’s preheating, get a deep baking pan, lay the chicken flat, and add sliced yellow onion, three bay leaves, and evenly distribute the slices of butter on top of the chicken (as shown in the video). In a separate bowl, mix 1 tablespoon of Better Than Bouillon with 1 cup of warm water and pour it into the pan.
3. First Bake: Cover the pan with foil and bake for 1.5 hours.
4. Baste the Chicken: After 1.5 hours, remove the pan and take off the foil. Baste the chicken with the juices at the bottom of the pan using a baster or a spoon.
5. Second Bake: Return the pan to the oven and bake the chicken uncovered for an additional 30 minutes.
6. Broil for Color: Once the 30 minutes are up, turn on your broiler to high. Let the chicken broil for 5 minutes to get a nice color. Keep a close eye on it, as broilers vary between ovens.
7. Serve: The chicken is now ready! I served it with white rice and a side of avocado.
