HOT CROSS BUN BUTTER PUDDING 🐣🐰
My Easter take on the classic ‘Bread & Butter Pudding.
Ingredients:
- 6 Hot Cross Buns - Classic, Fruit Free, Chocolate
- 4 eggs
- 625ml full cream milk
- 40g melted butter
- 100g white granulated sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla bean paste
- 70g Cadbury mini eggs
- 2 tbsp melted butter (for topping)
Method:
1. Pre heat fan forced oven to 175 degrees.
2. Crack eggs into a large mixing bowl and whisk to combine.
3. Add milk, melted butter, vanilla, sugar & cinnamon to the bowl and mix again.
4. Tear hot cross buns in half and place into the bottom of an 8” x 8” oven proof tray. Slowly pour half of the milk mixture over the buns. Add the other hot cross bun halves to the tray & top with remaining milk mixture. Allow to soak for 10 minutes.
5. Top with remaining melted butter & mini eggs.
6. Place into the oven for 25-30 minutes, or until the tops are golden brown.
7. Allow to set for 10 minutes post baking before serving.
8. Best served with vanilla ice cream or custard.
