HOT CROSS BUN TIRAMISU ☕️🍫

Ingredients:

- 9 choc chip HCB’s

- 200ml espresso

- 250g mascarpone cream

- 500g thickened cream

- 1 tsp vanilla bean paste

- cocoa powder for dusting

Method:

1. Begin by adding mascarpone cream, thickened cream & vanilla to the bowl of a stand mixer. Using the whisk attachment mix on high until thick & fluffy. Be careful to not over mix.

2. Split all hot cross buns in half. Place the bases of the buns in a single layer on the bottom of an 8” x 8” pan.

3. Use half the espresso to soak the buns.

4. Spread half of the mascarpone cream mixture on top.

5. Repeat with the remaining buns, espresso & cream.

6. Leave to sit in the fridge for 3 hours before dusting with cocoa powder & serving.
