Serves 8-10
Ingredients:
For the Mango Topping:
2 Australian mangos, chopped
1 tbsp sugar
1/4 cup water
1 -1/2 tbsp cornstarch
Fort the Crust:
1 cup graham cracker crumbs
3 tbsp unsalted butter, melted
1 tbsp maple syrup
Pinch of salt
For the Cheesecake Filling:
6 oz cream cheese, softened
1 cup sour cream
2 large eggs
1/3 cup sugar
2 tbsp flour
1 tsp vanilla extract
Whipped cream, for serving, if desired
Directions:
1. Add chopped mangoes, sugar, water, and cornstarch to a mall saucepan. Heat over medium-low for 4-5 minutes. Remove from heat and let cool. After cooled, puree in a blender.
2. Preheat the oven to 350deg F.
3. In a medium bowl, add graham cracker crumbs, melted butter, maple syrup and salt. Stir until well coated.
4. Press into the bottom of a springform pan; set aside.
5. In the bowl of a stand mixer fitted with the whisk attachment or in a large bowl with an electric handheld mixer whip the cream cheese and sour cream until smooth. Add in eggs, sugar, flour, and vanilla. Continue whipping until creamy and combined, about 2 minutes.
6. Pour the filling over the graham cracker crust.
7. Bake for 25 minutes.
8. Remove from oven and let cool at room temperature for 1 hour. Refrigerate for one hour and then remove the springform ring, running a knife around the edge to loosen, if needed.
9. Evenly spread the mango topping over the cheesecake.
10. Cover leftover cheesecake and refrigerate for up to 3 days.
