Crockpot chicken enchiladas

3 large pieces of chicken breast

2 cans of rotel

2 taco seasoning packets

One small onion

Add in the crockpot for 4 hours on high and then shred

Preheat oven to 350°

Add Mexican cheese and shredded chicken in tortilla and fold. Do it for all tortillas in a deep pan cover with enchilada sauce. Top with Mexican cheese. Bake for 20’.

I top with guacamole and cream corn.
