Apple Rum Cake Recipe | French Apple Cake
Ingredients:
3 apples, peeled, cored & sliced thinly (about 1/2-inch deep) (Granny Smith, Honeycrisp or Fuji)
2 large eggs, (room temperature)
3/4 cup (150g) granulated sugar (plus more for topping)
1/2 cup unsalted butter, melted (plus more for greasing)
1/4 cup dark rum or 2 tablespoons rum extract (or Brandy)
1 tablespoon vanilla extract
1 cup (120g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon lemon juice
2 tablespoons granulated sugar (for topping)
2-3 tablespoons powdered sugar (for topping/dusting)

Note: 1. Most type of apples will work well in this cake.
2. Use dark rum as it has depth, richer, and sweeter
flavor.
3. To prevent the apple slices from browning, toss them
1 tablespoon of lemon juice & 1 teaspoon of sugar.
4. To store, place the apple rum cake in an airtight container
at room temperature for up to 2 days. Cake can be frozen for
up to 2 months. After it is completely cooled, wrap it tightly
with aluminum foil or freezer wrap. Thaw overnight on the
countertop before serving.

Directions:
1. Preheat the oven to 350°F / 180°C.
2. Brush the 8-inch(8”) or 9-inch(9”) springform or regular cake pan with melted butter or nonstick cooking spray and line the bottom with parchment paper.
3. Peel apples, core, and cut in lengthwise, about 1/2-inch deep. Sprinkle 1 tablespoon of lemon juice and 1 teaspoon of granulated sugar to prevent the apple slices from browning. Reserve a handful of apple slices for topping.
4. In a small bowl, melt 1/2 cup butter and set aside.
5. In a medium mixing bowl, sift and whisk together the flour, baking powder and salt.
6. In a large mixing bowl, whisk eggs and sugar. Whisk in melted butter, rum, and vanilla extract until smooth and well combined.
7. Stir in flour mixture into egg-butter mixture (wet ingredients) until just combined. Fold in the sliced apples using rubber spatula.
8. Evenly pour and spread the apple rum batter into prepared cake pan. Smooth it out using an offset spatula. Top it with 2 tablespoons of granulated sugar.
9. Bake the Apple Rum Cake for 40-45 minutes, if using 8-inch cake pan or 35-40 minutes, if using 9-inch cake pan or until toothpick inserted into the center of the apple cake comes out clean.
10. Let the apple cake cool in the pan for 15 minutes. Gently remove the cake from the pan and allow to cool for additional 10 minutes.
