Chocolate-Coffee Mousse Recipe
Ingredients:
200 grams semi-sweet chocolate chips (or dark chocolate or milk chocolate )
1.5 tablespoons instant coffee (or more if desired)
200 ml heavy cream, chilled
60 grams unsalted butter (around 4.23 tbsp)
1/4 cup milk
1 large egg, room temperature (separated the yolk & white)

Notes: 1. If you’re in hurry, place the serving
cups in the freezer for 2 hours.
2. Garnish them with frozen or fresh
berries and will take this chocolate
coffee dessert to the next level.
3. When folding in the chocolate
coffee mixture, FOLD it gently using
spatula. Work fast yet smoothly.
4. DO NOT OVERMIX!
5. Switch up flavors like mint-flavored
chocolate. It work perfectly well
with coffee.
6. For 8 servings, use mini cups/small
ramekins (1/2 cup per person).

Directions:
1. Melt chocolate chips, milk, and butter in a saucepan over low heat. Stirring constantly until melted. Remove from heat and set aside.
2. Over a small bowl, open the egg into the egg separator. Allow the egg white to drip through the openings.
3. Add egg yolk to the chocolate mixture, whisking quickly.
4. Beat egg white in small bowl using electric mixer on medium speed until stiff peaks form. Add the white foam (egg white) into the chocolate mixture and gently mix.
5. Stir in coffee.
6.. In a separate chilled bowl, whisk chilled heavy cream until it thickens. Gradually fold in the whipped cream a little at a time using a spatula and gently blend everything until you get a uniform and lovely chocolatey mixture with a cream texture. Do not overmix.
7. Divide chocolate-coffee mixture evenly into 4 serving cups (or any cups of your choice for individual servings), cover with plastic wrap tightly and refrigerate for at least 4 hours or let it sit overnight to get a beautiful mousse texture.
