Holiday Eggnog Recipe

Yields: 10 servings

Ingredients:

1 cup granulated sugar

6 egg yolks

1 cup heavy cream

1 cup milk (or more if you like a thinner eggnog as desired)

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

Pinch of salt

2 ounces of rum (or any liquor of your choice)

2 ounces of bourbon (or any liquor of your choice)

6 egg whites, room temperature (optional)

Directions:

1. In a large bowl, whisk egg yolks and granulated sugar by hand or beat with an electric mixer on minimum speed for about 1 minute or until the egg mixture is thick and fluffy. Set aside.

2. In a saucepan, combine milk, heavy cream, nutmeg, cinnamon, salt, and vanilla. Cook over medium heat and stirring occasionally until steaming( not boiling). Remove from heat.

3. Temper the egg mixture by slowly adding 1/2 cup of hotmilk, then slowly whisk the rest of the milk into the egg mixture.

4. Return the egg mixture to the saucepan and cook over low heat, stirring frequently until the mixture begins to thicken slightly and coats the back of a spoon or your desired consistency. Do not boil. The mixture should reach 1t 160 °F (70°C). Remove from heat.

5. Strain through a fine mesh sieve into a bowl. Whisk in the liquor (rum and bourbon). Let chill for 1 hour.

6. (This is optional if you want to include egg whites) In a mixing bowl, beat the egg whites with an electric mixer on high speed until they reach nice stiff peaks. Fold it in the eggnog mixture gently, slowly, and carefully. Once done, allow to set for 3 hours in the fridge.

7. Serve with a sprinkle of cinnamon or freshly grated nutmeg.

... Read moreEggnog is a traditional holiday beverage loved for its rich, creamy texture and warm spices like nutmeg and cinnamon. When making your own Holiday Eggnog at home, a few tips can enhance both the flavor and safety of the drink. First, using fresh, high-quality eggs is essential, especially since this recipe involves tempering and light cooking to reach 160 °F (70°C), which helps reduce any food safety concerns. To customize your eggnog, you can experiment with different types of liquor such as spiced rum, brandy, or whiskey alongside bourbon for varied flavor profiles. For those who prefer a non-alcoholic version or are serving children, simply omit the liquor and consider adding a splash of vanilla or almond extract for extra depth. The option to incorporate whipped egg whites adds a light and frothy texture that elevates the overall mouthfeel, making the eggnog feel more indulgent and creamy. Be sure to fold the stiff peaks gently to maintain the airy consistency. Serving suggestions include garnishing with freshly grated nutmeg or a cinnamon stick for visual appeal and aromatic enhancement. Eggnog is versatile—it can be served cold from the fridge or gently warmed in a saucepan if you prefer a cozy hot beverage during chilly holiday evenings. Storage is straightforward; keep the eggnog refrigerated in an airtight container for up to a week. This allows you to prepare it ahead of time for holiday gatherings. Always give it a good stir or shake before serving as some separation might occur. Incorporating homemade eggnog into your holiday traditions is a comforting way to celebrate the season. It’s a drink that brings people together, evoking nostalgic memories while also allowing for creative twists to suit your taste preferences.
